Ingredients
- 2 cups Sweet Corn, Cleaned and Kernel off (keep cobs aside)
- 1 Onion, Chopped
- 3 cups Chicken Broth
- 1 tsp Cumin Seeds
- 1/4 tsp Turmeric Powder
- 1 tbsp Mozilla Cheese, Shredded
- 1 tsp Red Chilli Powder
- 3 tbsp Sour Cream
- Few Cilantro Leaves, Chopped
- 1 tbsp Lime Juice
- 1 tbsp Olive oil
How to make Mexican Corn Soup
Step 1: Heat oil in a pan, saute cumin seeds, onion for 2 minutes untill transculant. Add turmeric powder, chicken broth, sweet corn and cobs. Bring flame to higher and keep cooking till the corns become tender
Step 2: Simmer the heat and discard cobs from the soup puree
Step 3: In a blender, blend soup puree in batches untill very smooth. Pour smooth puree in that remaining pan and add sour cream. Mix well
