It is a great way that you will surely follow to let your family eat 'greens' in a delicious way. After eating once, they will never deny to eat it again, so just get ready to prepare the healthy salad with cilantro, spinach, lemon and pasta giving yuumy flavours. Also, you can keep this salad in the refrigerator for a week.


The recipe of this salad is given as follows.

Ingredients

    • 2 1/2 cups bowtie Pasta
    • 2 cups Spinach
    • 1 bunch Cilantro
    • 1/4 cups diced Onion
    • 2 chopped Garlic cloves
    • 2 diced Avocados
    • 1 can drained and rinsed Chickpeas
    • 1 cup cut in halfcherry Tomatoes




    Dressing
    • Juice of 1 Lemon
    • 2 tsp olive Oil
    • 1 tsp Sugar
    • 2 tsp Dijon Mustard
    • 1/2 tsp Cumin
    • Salt to taste
    • Pepper to taste


How to make Lemon Cilantro Avocado Pasta Salad

Step 1: Cook the pasta, then drain and set aside.

Step 2: In a food processor, process cilantro and spinach until chopped fine.
Step 3: In a bowl, add chickpeas, garlic, onion, tomatoes and avocado, then toss in cooked pasta, and stir until combined.
Step 4: Pour the dressing over the top and toss gently into salad until well coated
Step 5: Refrigerate the salad for 15 minutes to let flavors combine.
