These fritters would be great snacks for vegetarian that can be ready in a couple of minutes and handful of ingredients. This delicious fritters are the combination of healthy and nutritious millet, peas, cauliflower, ricotta and milk. 






Try out this cheesy and yummy millet, cauliflower, pea and ricotta fritters with yoghurt whose recipe given as follows.

Ingredients

    • 1/3 cup hulled Millet
    • 300g cut into florets Cauliflower
    • 1 cup frozen Peas
    • 1/2 cup Ricotta
    • 1/3 cup Milk
    • 1/2 cup plain Flour
    • 1 tsp ground Cumin
    • 2 tsp grated Lemon rind
    • 2 tbs chopped Parsley
    • 1/4 cup chopped Mint leaves
    • 2 tbs olive Oil
    • 2/3 cup Yoghurt
    • Lemon wedges

How to make Millet, Cauliflower, Pea and Ricotta Fritters

Step 1: Add millet in a saucepan and stir until becomes aromatic.
Step 2: Add 1 cup of water and boil until water is absorbed, then set aside covered.
Step 3: Meanwhile, boil cauliflower in water for 5 minutes, then add peas when cauliflower becomes a little firm.
Step 4: Drain well and mash with a fork well. Keep aside to cool.
Step 5: In a bowl, whisk ricotta and milk, and gradually add flour and cumin.
Step 6: Stir in millet, cauliflower mixture, rind, parsley and 2 tbs of mint well.
Step 7: Heat oil in a pan and cook 12 portions of fritter mixture from each side until turns golden.
Step 8: Add remaining mint to yoghurt and serve fritters with lemon wedges and yoghurt mixture
