Ingredients:
- 1 kg Rice
- 8 Cloves
- 1 Cinnamon Stick
- 6 Green Cardamoms
- 2 Bay Leaves
- 1/2 tsp Shahi Jeera / Caraway Seeds
- 1/2 tsp Nutmeg and Mace - Grated
- 1 tsp Coriander Powder
- 1 tsp Red Chili Powder
- 5-6 tbsp Fresh Mint - Chopped
- 2-3 Green Chilies - Chopped
- 4-5 Tomatoes - Chopped
- A whole bunch Coriander Leaves
- 8-9 medium size Onions - very Thinly Sliced
- Oil for deep frying + for Cooking
- 1 tbsp Ginger Garlic Paste
- 1/2 cup Milk
- 6-7 strands of Saffron / Kesar
- 6-7 tbsp Ghee / Clarified Butter
- Cashew nuts (as many as you want)
- Raisins and Almonds (Optional)
- 1 tbsp Garam Masala Powder
- 1 tbsp or less of Green Cardamom Powder
- 1 tsp Turmeric Powder
- 1 tsp Coriander Powder
- a pinch of Red Chili Powder(Optional)
- a pinch of Green Chili (Optional)
- 2 - 3 tsp Garlic Powder
- 2 -3 tsp of Onion Powder
- 2 - 4 tsp Ginger Powder
- 1 cup Tomato - Chopped
- 1 cup Milk
- Yogurt
- Salt to taste
- Coriander Leaves - Chopped
- Saffron
For marination:
- 1 Kg Chicken on the bone - Diced
- 1/2 Tsp Turmeric Powder
- 1 tbsp Ginger Garlic Paste
- 1 tsp Coriander Powder
- Salt to taste
How to make Chicken Biryani
Step 1: Marinate chicken with turmeric powder, ginger garlic paste, coriander powder and salt for at least 7-8 hours (more the better)

Step 2: Heat oil in a pan and shallow fry thinly sliced onions till they turn dark brown and crispy. Stir continuously on low to medium flame
Step 3: Take a deep wide vessel and heat oil. Add bay leaves, cloves, cinnamon, cardamoms and shahi jeera. Let it splutter
